Video Recipie for Vegetarian Chili

Ok this video is 14 minutes long -- BUT you'll have
delicious veggie chili if you follow my expert advice.

Alternatively gather up all of the ingredients listed here
and do your own thing.

This chili is even better after it sits in the refrigerator overnight.
Add about 3/4 cups of water, mix and heat thoroughly.

Leftover chili can be mixed with a little water
and one or two cups of elbo macaroni,
or pasta of your choice to make second meal.

Great with cornbread on the side!

List of Ingredients

Canned Goods

1 can - Black Beans
1 can - Pink Beans
1 can - Red Kidney Beans
2 cans - Diced Tomatos
1 can - Tomato Sauce
(All cans either 14 - 14.5 or 1 lb. cans)

Veggies

2 medium or 1 large - Onion(s)
1 - Green Pepper
1 - Red Sweet Pepper
3-4 Medium size -Carrots
3-4 stalks - Celery
1 small bunch - Cilanto ( about 3/4 cups chopped)
Approx 1/4 cup - Frozen Corn

Seasoning

2 TBS Cooking Oils (1/2 Olive Oil & 1/2 Canola Oil)
1 TBS - Chili Powder
1Tsp - Crushed Red Chili Pepper

Topping

Dollop of Sour Cream
and /or
Shredded Cheddar or Colby Cheese

6-10 Servings depending on size

Variation
Add 1/2 lb. or 1 lb. of browned ground beef to make a meaty chili.
